Why are many religious people so personally offended by legitimate criticism of their beliefs?

Many fanatics think they have a right to avenge their beliefs with threat of force or actual violence. This mentality is present in nearly all religions, but Islam is particularly susceptible. Am I crazy to expect adults, of any society, to behave maturely, and choose to debate the merits of their beliefs instead of enforcing them with violence?
